We are now seeking an innovative and experienced Head Chef to lead our kitchen team and help shape the future of our culinary offering.

The Scotsman Group is Scotlands largest and most diverse hospitality group, with a collection of over 40 venues across Scotland including bars, restaurants, hotels and more.

Job Overview: As the Head Chef at Forgan's, you will have the opportunity to put your mark on our menu, driving creativity while maintaining our commitment to using fresh, locally sourced ingredients. You will lead and inspire a passionate kitchen team, ensuring that every dish reflects the high standards Forgan's is known for. If you are a talented chef with a deep love for Scottish cuisine and a flair for innovation, this could be the perfect role for you.

Key Responsibilities:

  • Develop and execute seasonal menus that highlight the best of Scottish produce and deliver a memorable dining experience.
  • Lead, mentor, and train the kitchen team, fostering a positive and collaborative working environment.
  • Manage all aspects of kitchen operations, including stock control, budgeting, and supplier relationships.
  • Ensure that all dishes are prepared to the highest standards, with a focus on consistency, presentation, and quality.
  • Maintain a strong focus on sustainability, minimising food waste and ensuring efficient use of resources.
  • Uphold food safety and hygiene standards in line with regulatory requirements.
  • Collaborate with the management team to meet financial targets and contribute to the restaurants success.

Requirements:

  • Proven experience as a Head Chef or Senior Sous Chef in a high-quality restaurant environment.
  • Strong leadership skills with the ability to motivate and develop a team.
  • Passion for Scottish cuisine and locally sourced ingredients.
  • Creative approach to menu development, with an eye for detail and presentation.
  • Excellent organisational and time management skills.
  • Knowledge of food safety regulations and best practices.
  • Ability to work under pressure and manage a busy kitchen effectively.
