A DAY IN THE LIFE OF A CHEF DE PARTIE AT (INSERT HOTEL NAME)

What you'll be doing...

  • Lead and supervise Commis Chefs and Demi Chefs de Partie in assigned section, providing guidance and support as needed.
  • Ensure the quality and consistency of dishes prepared in their section, adhering to RBH culinary standards and procedures.
  • Assist in menu planning and development, contributing creative ideas and suggestions for new dishes or improvements to existing recipes.
  • Oversee stock control and ordering for their section, ensuring sufficient inventory levels while minimizing waste and maximizing profitability.
  • Train and mentor junior kitchen staff, providing ongoing coaching and feedback to support their development and growth.
  • Maintain cleanliness and organization of their section, including equipment, utensils, and work surfaces, in compliance with food safety and sanitation guidelines.
  • Support senior kitchen staff in daily operations, collaborating effectively with colleagues to ensure smooth kitchen operations and timely delivery of dishes.
  • Attend training sessions and workshops as required to enhance culinary skills and knowledge, staying updated on industry trends and best practices.
  • Address any challenges or concerns related to food quality, service standards, or kitchen operations, escalating issues to senior management as needed.
  • Demonstrate professionalism, reliability, and a strong work ethic in all aspects of job performance, setting a positive example for junior kitchen staff.
  • Coordinate with front-of-house staff to accommodate special dietary requests and guest preferences, providing alternatives or modifications to menu items as needed.
  • Take ownership of specific kitchen stations or sections during service periods, overseeing the preparation and execution of dishes to meet service standards and guest expectations.

WHAT WE NEED FROM YOU

To succeed in the role of Chef de Partie you will need the following qualities and skills.

  • The ability to adhering to the company's rules and regulations on policies and procedures relating to fire, hygiene, health & safety, and licensing regulations
  • The ability to manage various sections of the kitchen, whilst ensuring health & safety standards are met
  • To be flexible in your approach, and able to assist the Sous Chef and any other members of the kitchen brigade when required
  • A team player who thrives in the hustle and bustle of a busy kitchen department
  • Someone who is passionate about food and willing to learn
  • Previous experience in a similar role, at either Chef de Partie of commis level
  • An understanding of quality control and kitchen standards
