MAIN PURPOSE:

Through effective communication you would be leading and inspiring the restaurant and bar operations, ensuring a seamless, personalised and memorable guest experience. This role requires visible leadership, creativity, a flair for mixology, expertise in stock control, budget management and a strong commitment to motivating and developing a team. A full 360-degree scope of all aspects of the Food and Beverage department and overall guest experience.


KEY OBJECTIVES:

Leadership and Team Development

• Lead, inspire and mentor the restaurant and bar teams, fostering a culture of creativity, passion and excellence.

• Provide visible leadership on the floor, engaging with guests and team to ensure high standards of service.

• Conduct regular training sessions focusing on service excellence, mixology techniques, product knowledge and hospitality trends.

• Develop and implement a continuous improvement program to enhance team skills and performance.


Operational Excellence

• Oversee and monitor the standards and operations of the food and beverage team.

• Manage daily departmental operations.

• Innovate, developing new processes to enhance performance, exceed guest expectations and profitability.

• Handle guest feedback professionally, ensuring quick resolution and follow-up.

• Ensure all related systems are configured correctly, validated and working to full capacity.


Bar Service and Mixology

• Lead the development and execution of a dynamic and innovative beverage programme that would offer our guests the unexpected. Including signature cocktails and curated drinks menus.

• Ensure that the bar team are well-trained in mixology and guest service, delivering exceptional experiences to guests.

• Stay current on industry trends, continuously innovating the bar offerings to keep them fresh and exciting.

Stock Control and Budget Management

• Manage inventory, ordering and stock control to ensure efficient and cost-effective operations.

• Monitor and control costs, including beverage and payroll, to achieve budgetary goals and maximise profitability.

• Analyse financial reports, identify trends and implement strategies to optimise revenue and cost control.


Strategic Direction

• Collaborate with the Deputy General Manager and other departments to develop and execute a strategic plan for restaurant and bars.

• Identify opportunities to enhance the guest experience and drive revenue through creative programming and partnerships.

• Set performance goals for the restaurant and bar operations, tracking progress and making data-driven decisions to achieve them.


Collaboration and Coordination

• Work closely with other departments to ensure a seamless guest experience.

• Coordinate special requests, amenities and unique experiences for our guests in collaboration with relevant departments


Compliance and Quality Control

• Ensure compliance with all health, safety and licensing regulations, maintaining the highest standards of cleanliness and hygiene.

• Regularly review operational procedures and implement improvements to ensure a consistent and high quality guest experience.
