JOB SUMMARY/MAIN PURPOSE:

To prepare and cook all types of meals and specialised culinary items (including serving where appropriate) independently or as a member of a team including the preparation and cooking of food for the purpose of cook chill or cook freeze.

MAIN DUTIES / RESPONSIBILITIES

Be responsible for preparation, cooking dispatch and serving of all meals, snacks and beverages, in all associated areas to the agreed menus and standards.
Cater for any dietary requirements and special functions as the need may arise.
Ensure that food is cooked and stored in hygienic conditions.
Ensure that correct cleaning, washing-up and storage of crockery, equipment and other associated utensils within the department.
Utilise staff, materials and equipment, linen and food commodities and ensure that defects are rectified.
Be aware of and observe safety regulations and safe procedures generally.
Ensure the proper use and handling of equipment.
Attend staff training and assist senior catering staff with the development and training of staff as required.
Maintain simple records e.g. number of meals served, free meals issued, hospitality returns, stock control sheets, monitoring of sales and cash control.
Ensure that a high standard of personal hygiene and hygienic catering practices are maintained at all times.
Contribute ideas on staff menus, functions and catering service in general.
Order and check food supplies and to ensure that the procedures are adhered to at all times in relation to quantity and quality control.
Take control of the catering department as appropriate.
Undertake such other duties as may be assigned to the head of department.
Take responsibility for keys as required.

ESSENTIAL CRITERIA

City & Guilds 706/1 and 706/2 or equivalent certificates

Or

3 years relevant cooking experience

Or

City & Guilds 706/1 and 2 years relevant cooking experience

Or

V.Q. Level 2 in Catering

And

Basic Food Hygiene Certificate

DESIRABLE CITERIA

Operational knowledge and experience of Catering services in a complex organisation.

A working knowledge of HACCP.
