Trainee Butcher

Main purpose of job:

Assist and assume management and control of the day to day operations in the butchery. Assist in negotiation and purchasing of produce and products for sale in the butchery.

Comply with all environmental health, trading standards, food standards agency, health and safety, local council requirements and any other governing body to ensure legal compliance maintained at all time.

Maintain accurate records of sales and purchases and ensure safe handling of all raw meat entering the business. Assist in liaising internally and externally where required to provide all data for management, reporting and accounting requirements. Recruiting staff as and when necessary. Ensuring all Health & Safety regulations applicable to the butchery are in force and training is up to date. Liaising with trading standards and environmental health officers as and when required.

Duties:

Main responsibilities:

• The full carcass breakdown of beef, pork, lamb, poultry and venison to maximise carcass yield
• Lay out the cabinet display to present our products as per SOP's
• The production of sausages, burgers and oven ready products
• Maintain a clean and safe working environment at all times
• Process and record accurately meat deliveries inline with our processes
• Effectively practice stock rotation to ensure products are always fresh
• Serve customers in a polite, friendly and professional manner

• A willingness to learn and develop skills across all aspects of butchery
• Strong verbal communication skills
• The ability to work independently and as a team
• The ability to work in a fast paced environment and also to take initiative during quieter times
• Trustworthy, reliable and punctual
• To work alternate Saturdays

Pay:
£11.50-£14.00 per hour

Expected hours:
No more than 40 per week
