• Unload beef carcasses from trailer units
• Visually inspect carcasses for contamination and remove
• Complete required HACCP checks on carcasses and push in chills
• Report significant contamination or any variance from specification to the department manager
• Maintain accurate stock
• Operate machinery (may include mechanical lifting aid)
• Receive boughtin goods into the factory
• Maintain a sharp and sterile knife
• Ensure all relevant records and paperwork are maintained
• Working in a chilled environment
• Booking In any returned products
• Weighing and loading products on to trailers for other production areas
• Scanning products into run and moving products onto processing line
• Cutting off ribs
