Our Apprentice Butcher

The Newt butchery production facility is world class and plays a central role in the success and continued growth of our food production business. The butchery is the sole supplier of high-quality meat products to 11 outlets across the Newt estate (from the farm shop to the flagship botanical rooms restaurant), as well to our fast growing nationwide on-line grocery delivery service. The facility is part of the fabric of the Newt with features such as the Himalayan salt aging room and is accessible to visitors' tours and the ever popular butchery workshops held each month by the Head Butcher. With growth in mind, we need to add another apprentice to the team.

You will be joining a 7 day a week operational team with high animal welfare expectations. We are proud to be able to promote the use of grass fed and free-range livestock that include the rare breed `British White` cattle reared here on the estate.

This is a fantastic opportunity for someone aligning with our commitment to quality, efficiency, traceability, and sustainability and a passion for food to learn butchery skills from some of the best in the business amongst the most amazing surroundings

Through your Butchery apprenticeship at the Newt you will have a hands-on learning experience, gaining foundational knowledge and practical skills in the art of butchery.

You'll contribute to the production of beef, pork, lamb and game products as well as to the creation of charcuterie, biltong and cooked meats for sale as part of our ready to eat range.

Key Responsibilities

  • Develop foundational knowledge in butchery principles, meat species, and carcass processing techniques.
  • Learn and apply craft and knife skills for cutting, boning, trimming, and mincing meat.
  • Collaborate with the team to meet deadlines and productivity targets in a busy environment.
  • Adhere to health, food safety, and hygiene standards in the butchery environment.
  • Support stock control, product pricing, quality assurance, and customer expectations.
