We are currently looking for an outstanding Executive Head Chef on behalf of our client to join their management team.  This role is based in the Scottish Highlands.  You will have accountability for the standards of food across all their outlets.  As a 5* Resort they have high expectations for the food they serve with pride and passion. Formal dining, brasserie, family eating, all-day cafes and the staff canteen are all in the portfolio as we can look after as many as 1500 guests and 500 staff a day. Apart from their year-round daily resort operation for families, couples, businesses and organisations, they are big on weddings, celebrations and prestigious events with annual conventions and international product launches to name a few, as well as going big on Christmas and Hogmanay so it’s a varied and diverse challenge.

What is needed the Executive Chef:

  • You’ll not just be a visionary, inspirational figure with experience in a leadership role – you’ll also be a great coach, mentor and communicator. 
  • You will be part of a large management team so developing effective relationships with colleagues is important. 
  • Ready to apply your creativity, flair and innovation in equal measure to everything from the canteen to our restaurants, your imagination will stretch beyond putting great food on a plate as you’ll get just as excited about the production, procurement and menu-engineering that goes behind the kind of consistency and standards we aspire to.
  • We’ll expect you to get fired up about food, yes, but also about customers, local produce and profitability. 
  • And that’s before we get started on food safety and team development. 
  • You won’t need to type as fast as you can slice, but we see utilising the latest technology as the key to success, so you’ll also be pretty IT-savvy. 
  • Most of all we’re looking for a motivated long-term player who’s prepared to roll up their sleeves and help us get the quick-wins whilst starting to build for the future with our support. 

We’re looking for someone pretty special for this role and you’ll be able to demonstrate experience in a volume environment, producing excellent food.  A strong management background good staff management good financials and commercial understanding ability to run multiple outlets (they have 5) each outlet has its own team with head chefs.  500 covers average for breakfast (800 is a full resort including self-catering) averages at 80% occupancy across the resort across the year current kitchen teams are good and coping and can deliver and progress and elevate food, product, service and offering - have a very strong head chef in place
