The Role:
As our Sous Chef, you will be instrumental in delivering a refined dining experience that delights our members. Working closely with our Head Chef, you will contribute to the creation of sophisticated and seasonal menus that showcase both culinary creativity and technical mastery. You will also take on a leadership role in the kitchen, ensuring that each dish is executed to perfection and that our high standards are consistently met.
Key Responsibilities:
- Collaborate with the Head Chef to design and develop fine dining / high-end Brasserie menus that reflect the latest trends in haute cuisine while maintaining a focus on seasonal, locally sourced ingredients.
- Supervise all aspects of kitchen operations, ensuring the meticulous preparation, cooking, and presentation of each dish in accordance with our fine dining / high end Brasserie standards.
- Lead and inspire the kitchen brigade, fostering a culture of excellence, precision, and teamwork.
- Uphold the highest standards of food quality, hygiene, and safety, ensuring that every dish not only meets but exceeds the expectations of our members.
- Manage stock levels and procurement, ensuring that only the finest ingredients are used and that waste is minimized.
- Innovate and introduce new techniques and flavor profiles, ensuring that our culinary offerings remain at the cutting edge of fine dining / high-end Brasserie.
- Assist in the training and development of junior chefs, nurturing talent and promoting continuous learning and improvement.
- Ensure all dietary requirements and member preferences are meticulously catered to, delivering a personalized dining experience.
About You:
- Extensive experience as a Sous Chef within a fine dining / high-end Brasserie environment, such as a Michelin-starred restaurant, luxury hotel, or exclusive private members club.
- A deep passion for gastronomy and a commitment to creating exceptional culinary experiences.
- Advanced knowledge of modern and classical cooking techniques, with a flair for presentation and detail.
- Strong leadership and mentoring skills, with the ability to inspire and develop a high-performing kitchen team.
- A relentless focus on quality, with the ability to maintain consistency in a fast-paced, high-pressure environment.
- Excellent organizational and time-management skills.
- Formal culinary training, with relevant qualifications in fine dining / high-end Brasserie is highly desirable.
